Experience the Bustling Harvest of Asparagus in the Mělnicko Region
As spring arrives, the Mělnicko region of the Polabí lowlands comes alive with the bustling harvest of asparagus. This prized vegetable, known for its delicate flavor and versatility in culinary creations, is cultivated on approximately 150 hectares by a local company. With nearly 300 dedicated workers, the asparagus harvest is a seasonal event that attracts attention and excitement.
Venturing into the fields around the village of Hostín u Vojkova, one can witness the vibrant atmosphere of the asparagus harvest. Around 200 workers diligently harvest the crop, while additional employees work in the hall where the asparagus is carefully cleaned and packaged for sale in stores.
Asparagus is grown in neat rows, with approximately 5.5 kilometers of rows per hectare. Its rapid growth rate of up to eight centimeters per day necessitates daily harvesting to ensure optimal quality. The peak of the season is experienced now, but production gradually declines as May comes to a close, with white asparagus disappearing and the focus shifting to green asparagus until the holidays.
One fascinating aspect of asparagus cultivation is the distinction between white, green, and purple varieties, primarily determined by photosynthesis. White asparagus is grown underground, simulating darkness by using black and white film. The black side of the film faces inwards to provide warmth, while the white side faces outwards to maintain coolness. This unique growing method helps preserve the delicate texture and fragility of white asparagus, resulting in distinct taste properties.
The harvesting process involves lifting the black sheet and using a specialized tool called a dibble to puncture the ground at the desired length, facilitating the extraction of asparagus from the soil. Once harvested, the asparagus is promptly transported in crates to the hall, where it undergoes cooling to maintain freshness. Swiftly chilling the asparagus to temperatures between zero and one degree Celsius halts metabolic processes and preserves its quality.
Before enjoying this culinary delicacy, it is recommended to peel the white asparagus to remove the bitter skin. With its light and sandy soil requirements, meticulous cultivation techniques, and dedicated workforce, the Mělnicko region proudly contributes to the asparagus season, delighting both locals and culinary enthusiasts with this seasonal treasure.
